Ingredients

1 tsp peppercorn

2 tbsp water

1 cup sugar

1.25 cups water

1.25 cups of mangos

Directions

Lets start by crushing up 1tsp peppercorn. Toast it for about 1 minute on medium low heat. Then add 2tbsp of water and let it simmer while we add in our 1cup of sugar. Stir together until all the sugar has become slightly wet then add 1.25cup water. Let the sugar dissolve while continuing to stir. this can take about 5 minutes give or take based of what your pans heat is. Once all the sugar has dissolved add in 1.25 cup of mangos. They can be fresh or frozen I've used both for this recipe and they taste the same! After adding the mangos bring to medium heat and let it come to a boil. Once boiling let it continue for 2 minutes then bring back down to a simmer and let it keep cooking down. Taste is to make sure the flavor profile is how you want it and enjoy!

This drink was originally made for a baby shower where I spent about a week developing 3 drinks that I believed the mother and father would like. The mom wanted something mango inspired and after mixing mango with a few other flavors I decided the peppercorn was the most unique and the best tasting one one at the time.
